Frequently Asked Questions (FAQs)

Using lower-moisture sugar (granulated) and fat (vegetable shortening), plus a longer, slower bake than normal, produces light, crunchy cookies. That said, using a combination of butter and vegetable shortening (as in the original recipe), or even using all butter, will make an acceptably crunchy chocolate chip cookie.

2. What makes cookies crunchy vs chewy?

However, it's the yolks that make cookies chewy, while the whites lead to crunchier cookies. For our purposes, that means that agar-agar or aquafaba, which act as egg white replacements, can lead to crispy cookies. These Fugetaboutit Cookies use aquafaba and cream of tartar for delicious, crunchy cookies.

3. How do you make cookies stay crunchy?

Keep those cookies crisp by storing them in an airtight container. Some people toss a piece of bread in with the cookies to help absorb any excess moisture. You could also re-crisp them by baking on a wire rack in a 300 degree F oven for a few minutes.

4. How do you make cookies crispy and thin?

Melted butter – to achieve thin and crisp cookies I've discovered melted butter is really crucial. Melted butter helps the cookies to spread out and become flatter with crisp edges. Sugar – Another key trick is using more granulated sugar than brown sugar which will also help produce flat, chewy, crunchy cookies.
