Notes: Dark ruby in colour, the nose reveals fragrant aromas of violets, dark plums and spices, while the palate is medium bodied with good structure. Refined and balanced, this elegant wine shows good intensity and a lengthy finish.

Nautilus Estate 2015/2016 'The Paper' Sauvignon Blanc Marlborough New Zealand White Wine, 75 cl

The Paper Nautilus exhibits subtle aromas of lemon peel, mango and hazelnuts. The palate is full with a rich mid-palate and a dry lingering finish.
The Paper Nautilus wine is produced in small batches and represents "an intimate knowledge of our estate vineyard sites" gained over 30 years. This is the result of hand-picked fruit from a single site that was fermented on solids at a warmer temperature in a large old oak cuve. The resulting wine has a more subtle fruit expression and greater textural qualities than the classic style. The name comes from the 'Argonaut' or 'Paper Nautilus' which while preferring tropical and sub-tropical waters is occasionally carried south by ocean currents to the cooler waters off New Zealand. The nickname 'Paper Nautilus' comes from the very fine, paper-thin white shells the creatures are encased in and one of which is depicted on the label.
Hand-picked fruit from our Renwick vineyard was chilled overnight before being whole bunch pressed. The juice was settled overnight before racking, including some solids, to a 3 year old, 3000 L French Oak Cuve.
23 days fermentation the wine was matured on yeast lees for seven months before clarification & bottling.
