Sanchez Romate Pedro Ximenez Cardenal Cisneros Sherry 75 cl

PX sherries from Jerez are made with very ripe grapes that have been dried in the sun for up to 20 days. This concentrates the sugars and flavours within the grape as the water evaporates and gives rise to a much sweeter must; the wine can only achieve partial fermentation in such a high fructose environment and the end wine is very sweet with a highly concnetrated raisin-like character. This a very old one spending at least 15 years in solera.
On the nose this is raisins and sultanas with just a touch of nuts, dried fruit and oaky spice. A big, rich, luscious velvety palate with a strong character evoking dates and prunes. Further complexity slowly revelas itself as creamy raisins and espresso coffee. Very sweet but on the finish there is the merest hint of balancing acidity which is very welcome.
Pedro Ximenez is the grape variety. The wine is named after the Cardinal Francisco Jimenez de Cisneros, the Grand Inquisitor. Cisneros was a major influence on Spanish policy under King Ferdiannd II at the time of Christopher Columbus who's voyages to the New World sailed from the Jerez region of Spain. The cardinal's second name would have been spelt Ximenes in his own lifetime.

Essentially it starts life as a Fino which undergoes further ageing after the protective flor (yeast) layer has gone. The complex ageing results in one of the finest sherries

Sanchez Romate Amontillado NPU. Amontillado in the true sense is a very old fino. A dry elegant wine that develops complex nutty characterisitcs. NPU means Non Plus Ultra; literally 'nothing further beyond'. In a way a play on words suggesting that there is no better wine than this but at the same time referencing the ancient warning to sailors in this area; it was allegedly inscribed on the nearby Pillars of Hercules and ultimately proven fabulously wrong by Christopher Columbus.
Drink either lightly chilled or at ambient temperature in a wine glass. Works well as an aperitif or with ,breadsticks, olives, anything marinated in vinegar.Please note that this is an old 'true' amontiallado and as such is not a medium-dry wine. A connoisseurs delight.

Sanchez Romate Cardenal Mendoza Classico 15yo Spanish Brandy 70 cl

Cardenal Mendoza is one of the few great brandies produced in a time honoured system, exaclty as it was more than 100 years ago. Made according to the unique traditions specific to Jerez de la Frontera; aged initially in special 250 litre American Oak casks it is then introduced to the system of criaderas y soleras which for Mendoza means 500 litre casks that have previously been used to age Pedro Ximenez and Oloroso sherries. In this way the brandy is continuosuly blended and aged for many years.
Aromas of raisins and plums, espresso coffee and a touch of liquorice. Sweet and fat on the palate with lots of dried fruit and more raisins. Distinctive unique taste with a very cultured PX-influence and just enough bittersweet coffee and caramel to balance well. A well balanced long and nutty finish.
The first four barrels of Cardenal Mendoza were laid down in 1781 and these are still in use today! . Cardenal Mendoza surpasses the Consejo Regulador regualtions with ease making it one of the greatest and most sought after brandies in its category.
